The project focuses on the development of an innovative vegan crab meat substitute using sustainable and natural ingredients. The goal is to create high-quality products that mimic the fibrous structure of real crab meat, offering consumers a fully vegan alternative with comparable taste and texture. During the course of the project, various product formulations will be developed, pilot batch tests will be conducted, and the technological process will be optimized to ensure the product is ready for industrial-scale production and market commercialization. Special attention will be paid to its acceptance in both local and international markets.
